Well, needless to say, I jumped at the chance to participate. I'd found out about this super fun way to kick start my holiday season just a few weeks too late last year, and wasn't about to let it slip away this time. Let me just tell you, so far, it's been an absolute blast!
I decided to make Hot Cocoa Cookies for my fellow participants. If you'd like to try these awesomely soft and gooey cookies, follow along in this episode of Kitchen Corner!
What you'll need:
- 1 3/4 C flour
- 1 C hot cocoa mix (NOT DIET)
- 1 tsp baking soda
- 1/2 tsp salt
- 1 stick (8 Tbs) butter
- 1/3 C sugar
- 1/2 C unsweetened applesauce
- 2 eggs
- 1/4 C milk
- 1 tsp vanilla
- 24 marshmallows
- 1/2 mini chocolate chips
How to:
Preheat oven to 350° F
Begin by combining the first 4 ingredients. Set aside. Using a stand mixer, or large bowl and handheld mixer, cream together the butter and sugar. Add eggs, one at a time. Add applesauce, milk, and vanilla.
Slowly combine dry ingredients until just mixed.
Cover cookie sheet in fresh parchment paper for each new batch. Scoop 1" heaps and place approx. 2" apart.
Back for 6 minutes, or until just set.
Remove from oven and top first with chocolate chips, then marshmallow half (cut side down).
Return to oven for 2 minutes to complete baking.
Remove from oven and allow to cool on a rack.
